All Almonds in the stores and on most websites except www.chorganicalmonds.com are pasteurized! You must be careful. If they are organic that means they are steam or heat treated which reduced many nutritional characteristics of a truly raw almond. Capay Hills Orchard almonds are NOT pasteruized. Almonds in stores are required by law to be pasteurized. The don't have to tell you they have been pasteurized and the dont have to tell you how. The label can even use the term "raw". You must go straight to the farm, either by visiting the farm or visit their virtual farm stand (website),
