Should I sprout my almonds

I sometimes get asked this question.
First of all, sprouting is worthless and a waste of time unless you are working with a truly raw, unpasteruized almond which you can only buy from a farmer. The California "raw almonds" in the store are pasteruized by law and the label will not tell you that. The law allows direct sales of unpasteurized almonds from a farmer. You'll want to ensure the farmer you purchased from did not pasteurize them.
Pasteurization involves steam heat for an organic almond or Propylene Oxide (PPO) fumigation for non-organic.
Sprouting activates the almond's growth enzymes which is beneficial for those who have difficulty digesting almonds and want to ensure they are maximizing nutrient absorption by reducing phytic acid and enzyme inhibitors. By reducing phytic acid, sprouting can increase the availability of minerals like iron, zinc, and calcium.
The sprouting process is simple, just cover the almonds with plenty of water for 8-12 hours. The almonds will soak up alot of water, so you cant use too much water. The resulting almonds will have a little white tip, dont expect a big tail without longer soaking and exposure to growing conditions. This process will also soften the almonds, making them easier to chew and potentially enhancing their flavor. However, it's not essential, and raw, unsprouted almonds are still a nutritious snack. The next step is optional which is to remove the moisture using a dehydrator, but do it less than 100 degrees to avoid cooking them.

Sprouted almonds may also have higher antioxidant levels than typical raw or roasted almonds. Soaking softens the almonds, making them easier to chew, especially for those with dental issues.
So, its your call, there is some benefit to sprouting almonds, but it's not a requirement for enjoying them and getting a majority of the huge nutirtional benefit from the almond superfood.
