The organic, naturally smoked almonds are a delicious snack. The only ingredients are organic raw almonds, extra virgin organic olive oil, and sea salt. To prepare the nuts for smoking, I use powdered sea salt mixed with a small amount of organic olive oil. Then I mix this solution with whole raw almonds. I roast-smoke them at 280 degrees for 3 hours using almond wood as the fuel.
The raw almonds are a nonpareil variety and are not pasteurized or roasted. Because they have not been pasteurized or roasted, these almonds have the enzymes our bodies need to properly break down large molecules into smaller ones so they can be absorbed more easily by the intestines. Starch molecules, for example, are too large to be absorbed by the intestine, but enzymes hydrolyze the starch chains into smaller molecules such as maltose and eventually glucose, which can then be absorbed by the body. Eating these almonds is part of eating a healthy diet.
Our almond butter is truly raw. The only ingredient is unpasteurized organic almonds. I use a stone grinder to keep the processing temperature low and preserve the enzymes and their benefits. Food processors tend to heat the nuts up beyond the enzyme survival level.
